What’s Up Wednesday (on a Thursday)
What’s up Wednesday but on a Thursday! I was shocked when I realized it was the last Wednesday of the month yesterday and totally missed wrapping up our month with one of my favorite posts. What We’re Eating
Soup is my favorite in the winter and I’ve been making all my favorites. This chicken tortilla-less version is always satisfying. I switch things up and add corn if I need a few more carbs in my day or just top with cheese and avocado if I need more fat. I’ve also made this low carb zuppa toscana that was so incredibly yummy and I swapped the italian sausage with making my own italian chicken sausage to make it a little less fatty and it was delicious.
Clearly not a food blogger, but this has been one of my favorite lunches. I start with a base of cauliflower rice topped with a veggie and some leftover chicken and top with a little 2% cheese and some Franks hot sauce. So easy and yummy!
And at night this is one of my favorite treats. Fairlife protein shakes have been by far my favorite protein drink and typically I have it alone but on nights when I need a few more carbs I combine with Halo Top chocolate ice cream and it is seriously good!
What I’m Loving
This girl! She is so much fun right now and had two sleepovers this month with Honey and Pop K! We cannot get enough of her. She is funny and so incredibly smart and I’d love to just bottle her up so we never forget what she was like at 2 1/2. These little wooden hearts were perfect for a little painting fun and are only $5 for a set of 3! The set comes with the paint and the brushes too! There is also a set of wooden letters XOXO and for $5 I have used those without painting for a little mantle decor.
What We’ve Been Up To
January is always a fairly slow month but we have managed to sneak in some celebrations and fun too!
Our sweet Dillon turned 21 and we had a full Sunday Funday celebrating him with a few family and friends.
Seeing the painted churches has been on my list of weekend road trips for awhile and Jordan and I finally made it happen. Hoping to pull the full post together for tomorrow! We visited 5 churches and they are all unique but beautiful in their own way.

What I’m Watching/Reading
I am currently reading Friends With Issues which debuted on Tuesday. What I’m Listening To
This is a relatively new podcast with new episodes releasing each Monday surrounding the first World Trade Center bombing which was meant to topple the towers. It’s been very interesting and the episodes are fairly short.
The RD vs BS podcast is one of my favorites. These two registered dieticians dig into all the different nutrition and diet info out in the world and let you know if it really is valid or just BS. My latest favorite was an interview with Elaina Efird who shares lots of info on Instagram.
What I’m Wearing
This jacket on repeat! It’s so cozy and perfect for the cold days in Texas. You can see all the winter outfits I’ve been wearing lately here.
What I’m Doing this Weekend
Believe it or not, I will be adding rhinestones to competition costumes! I’m not crafty but can follow directions so hopefully this goes well. AND…Carly has a tiny part in the high school production of Annie so I’ll be heading out to see that too.
What I’m Looking Forward to Next Month
Carly starts competition season for dance in February so we are looking forward too seeing her team perform after all their hard work!
