What’s Up Wednesday {May}

WHAT WE’RE EATING THIS WEEK
Slightly cheating because so far I have been lucky enough to bring home brisket and sausage from a workshop and dined out on Tuesday and have not had to cook this week! Last week I made some really yummy stuffed bell peppers though and thought I would share the recipe!
6 bell peppers
1 lbs lean ground meat
1 cup rice
1 can rotel tomatoes
1 Tbsp Worcheshire
Salt and Pepper to taste
Grated cheese
1/2 cup chopped onion
Cut the tops off bell peppers and remove seed and core. Chop the useable part of the tops. Bring a pot of water to boil and place the bell peppers in rolling water for 3-5 minutes to soften and then remove to a paper towel. While the peppers are boiling cook the rice as directed. I use brown rice but it is really your preference. Brown hamburger meat with chopped onion and bell pepper. Add Rotel tomatoes once browned. Once rice is ready add to meat mixture. Stuff peppers with meat mixture and top with grated cheese. Bake covered at 350 for 15-20 minutes.
So yum!

WHAT I’M REMINISCING ABOUT
This last little baby of mine is growing up a little too fast all of a sudden! This really doesn’t seem so long ago but on Friday she will be graduating from fourth grade!
WHAT I’M LOVING
End of school….specifically elementary school…activities! In case you haven’t heard me express my joy over the last year of elementary school let me remind you. Fourteen of the last nineteen years I have had an elementary student and I am so ready to be done. What I will miss is the fun elementary brings and this girl has been killing it lately with her blooming personality! 4th Grade talent show was Tuesday night and she and her friends were hilarious in their skit! I was so cracking up at how funny these girls were.
WHAT WE’VE BEEN UP TO
Dance Recital!
Baseball or 7 on 7 pretty much every weekend!
An unexpected surgery for this kid!
Getting to know my new fur grandbaby Pesto!
And a road trip cross country with this kid!
WHAT I’M DREADING
So when I grabbed my car from Dallas to make the last trek home to College Station, I made it about 10 miles before the A/C quit. I’m definitely dreading dropping the care off at the dealer and finding out what the bill might be.
WHAT I’M WORKING ON
Hopefully I’m going to get around to styling this console table soon! I have lots of ideas since every blogger I know owns this table. Really hopeful I will find a new couch for this room soon too!
WHAT I’M EXCITED ABOUT
Last day of school!! Long days, late nights and a relaxed schedule with no lunches to buy for. It is a much needed break.
WHAT I’M WATCHING/READING
The June In Style magazine featuring a great interview with Julia Roberts! I read from cover to cover but her interview was my favorite party. When talking about her single mom working when she was young and not being home all day she said she never really thought of her mom as not being with them. She said “and that’s the magic trick: to make people feel that they’re with you when they’re not”. I loved this! As a work out of the home mom there have been times when I’ve wondered if my kids felt like I left them alone and this was very reassuring.
Yes I realize I’m super slow but I am still reading this book! I’m almost done and I cannot wait to post a review and pull out some of the favorites I’ve picked up. If you are like me an often speak before you think, this book is for you!
WHAT I’M LISTENING TO
Lot’s of conversations with Carly! She is just a mess friends and I am a little scared and a little excited to see what is to come. Our latest convo about marriage…..
Carly “If you think I’m getting married you are going to be disappointed sweetie” (yes really she called me sweetie)
Me “Oh come on, you don’t want to get married one day?”
Carly “No! I want to be successful!”
Me “Umm…hello…you can be successful AND married”
Carly “Actually I see it as more of a distraction”
WHAT I’M WEARING
Fun summer colors and light weight fabrics that can be layered. It is heating up quite nicely in Texas but a jacket is still needed most days at my office. This look works for both! Plus Old Navy has all dresses on sale 50% off. This exact dress is no longer available but here is a very similar option in a solid. See two ways I styled this dress here. Swing dresses use to be something I would not try and now I’m loving them!
I’ve definitely shared my love for J. Crew Shorts previously ( I buy the 4″ or 5″) and they are still my fave. I loved dressing this orangy red pair up with some stripes and a jacket for girls night out. This new striped clutch from Stella & Dot is my new fave!
WHAT I’M DOING THIS WEEKEND
Guess what I’m NOT doing??!! That’s right we have the weekend off from baseball and I seriously am so excited. Since it’s a long one we are planning to head down to the coast for a much needed day out on the water. Hopefully we will catch some fish and then spend some time catching up with family in my hometown!
WHAT I’M LOOKING FORWARD TO NEXT MONTH
Vacation! This is the first year Dillon’s baseball team will travel out of state and we will be headed to Springfield, Missouri for a week. Baseball schedules will make things a little tricky for doing too much planning ahead of time but I definitely think we will be able to find some down time and maybe a lake somewhere! If you are from the area I’d love to know what you might suggest for outings in the area!
WHAT ELSE IS NEW
This top arrived while I was on my road trip and Oh..My…Goodness! I haven’t bought much lately but this top is so a new favorite! Perfect weight for Texas summers and it’s adorable. I love tops that come in actual sizes because they seem to fit me better. I wore this Tuesday night and it was adorable paired with chambray shorts and turquoise jewelry! It comes in two other colors as well.

I am thinking that book would be a perfect read for me. I sometimes have a hard time engaging my brain BEFORE engaging my mouth. #guilty

Sarah let me tell you about lunches…get them trained early to make their own!! I make sure there are plenty of individually wrapped items but they pretty much pick what they like. Obviously I have to make sure here and there that they have some nutritional value but I learned early if I packed something they didn't really choose it all came back home.
These kind of posts always help one get to know another so easily.
Good idea! I already told Baby Fox he was going to have to help me chose what to put in his lunches each day for school starting next year. Currently his school gives him a lunch, so he has no choice. It's definitely going to be different for him. Thanks for the tip! I remember making my own lunches at a very early age.
