What We’re Eating
This week I’ve made a few easy favorites to take us through the week and give us leftovers for lunches as well. Today is my last birthday lunch with the office and we have birthday dinner with Keith’s mom and sister so I’m taking the day off! Here are the recipes I’ve used this week!
Fed + Fit Barbacoa – This recipe uses the crock pot but I followed the recipe and then cooked in the instant pot for 50 minutes and it was perfect! We used this for tacos at dinner and with eggs for breakfast. So yummy.
Pot Roast with Potatoes and Carrots – I’m not gonna lie, my pot roast recipe is super easy but it is delicious. Add roast, potatoes and carrots to crock pot with beef broth and then pour in a packet of lipton onion soup mix and cook for 8 hours. Pretty much comes out perfect every time!
Spinach Pesto Baked Tacos – And if you need an easy way to sneak in some veggies, these spinach pesto baked tacos are always a huge win at our house.
What I’m Reminiscing About
Timehop is so cruel some days! How was this only 7 years ago y’all. All my babies are so grown up now and I’m not gonna lie, I miss days like this at the pumpkin patch.
What We’ve Been Up To
I kicked off the month with a trip to Nashville to visit two of my blog besties and one of my high school friends.
Jordan turned 31 while I was in Nashville so we delayed our celebration and got together for brunch at one of ouur fave local restaurants.
Taylor turned 28 on the same day as Jordan and so of course we also celebrated her with dinner at our fave local pizza joint.
Carly Jo turned 16 in September but we had to push her Sweet 16 Brunch off until October. It turned out so cute!
We also had a full week of celebrating HomecomingI It was so much fun and we have been loving Friday night lights life. Click only if you are ready for photo overload of all the fun and the dress up pics!
Riley turned 28 on the 18th and we had a quiet little dinner with just the four of us since Keith was out of town.
And then I had most of my crew over for tacos on my birthday as I celebrated turning 52! Y’all….I just don’t know where the years go but it’s hard to believe sometimes.
And of course, baseball is never too far out of our minds! Dillon played a scrimmage in College Station so we were able to catch a game too .

What I’m Watching/Reading
I’m loving this new book by Christy Wright. Her approach to balance is similar to mine…some seasons really do just require you to prioritize on what has to get dono and drop some things that don’t. It’s balance but with a twist. There is a free guide to download with the book and I’m working my way through.
What I’m Listening To
I love Cody Johnson and his new album dropped recently. One of my fave ways of connecting with my boys is through music so when Dillon started asking me if I had listened I knew I needed to jump on. So many amazing songs on this album and many evoked lots of emotion!
What I’m Wearing
Transitioning to fall in Texas is tricky. We want to wear all the fall inspired clothes but temps are often still in the 90s! I have been pulling in some fall colors along with layering lightweight jackets and cardigans to make things feel more “fallish”.

Dresses and jackets are definitely a favorite of mine this time of year when it’s so hot outside but freezing in my office! Why is it always like that??
Is three floral dresses too many to add to your fall closet? Asking for a friend! Ha! I love this one too and it has so many great colors to pull from like this great burnt orange.
I showed off 3 ways to wear this burnt orange cardigan on Instagram and by far this was my favorite! Gingham is such a favorite of mine for fall and with these jeans that are so flattering it paired up nicely.
I may have made this my uniforrm this month! Seriously, this plaid has been heavy, heavy, heavy in the rotation. It’s so soft and a great fit but the colors are my favorite!
Are you tired of hearing about this blazer yet? I’m not joking about how great it is and for under $35 it’s such a win! Speaking of pants that make your legs look like they go for days……these are my very favorite dress pants and I have them in 4 colors.
Okay, one more look at the blazer with some shorts for an easy fall date night look! I’m kind of crushing over this combo even though I haven’t gotten to take it for a spin yet. If you are looking for an easy tank to layer under jackets, this one comes in tons of colors.
What I’m Doing this Weekend
I’m headed to spend the weekend with my mom. It’s always a time full of mixed emotions and highs and lows but with lots of prayer ahead of time I’m hopeful it will be a good one!
What I’m Looking Forward to Next Month
Hmmm….November is going to be interesting as we will definitely have football playoffs and hopefully Thanksgiving with my crew! We will only know week by week what day the games will be so it’s hard to plan. And since I never decorated for fall, I may just go ahead and get started on Christmas early.
