What We’re Eating

Instant Pot Chicken & Broccoli Stir fry

I’ve been back to counting macros and looking for meals that work for both me and my family. Anytime I can find a recipe we love that I can sub cauliflower rice into while they have traditional rice is a win. This recipe from The Whole Kitchen Sink is a tried and true win at our house and doesn’t take long to pull together.

While it was 80 on Monday and Tuesday we are now back to soup weather so I’m thinking an easy pot of chili is going to be on the menu this week too!

The Queen's Chronicles #texasfreeze

This time last year we were just thawing out from a week of frozen roads and electricity woes in Texas. Definitely way different this year as we have had some 80 degree days.

What We’ve Been Up To

As I mentioned in this weeks Queen’s Chronicles, life for us right now is all about dance and baseball. It is contest season for drill team and college baseball is off and running. For me this means no free weekends until June! I’d lie if I said I didn’t love it though.

What I’m Working On

The annual budget. So exciting, I know! During years when our state legislature is not in session we work on the university budget in February. It’s busy but I love this part of my job!

What I’m Watching/Reading

I’ve waited so long for the second season of Sweet Magnolias and have been finding little bits of time to binge. So far it has felt a little slower than season one and a little bit cheesier but I’m still enjoying it.

My Oxford Year

After reading four books in January, my reading slowed way down! I’m currently reading My Oxford Year which has been on my reading list for a really long time. It took a turn I wasn’t expecting and I’m enjoying it. Finding out as a Texas resident I could check books out from the Houston library for my Kindle has been a huge game changer! I have The Maid qued up to read as soon as I finish this one.

What I’m Listening To

Cody Johnson

Cody Johnson’s new album is so good and I’m loving this spotify mix that includes his new music along with some other country favorites. I alternate between this, some Taylor Swifts release of her 22 album and Christian music like this playlist while I’m at work during the day.

What I’m Wearing

I’ve been shopping my closet in February to create 28 looks to share with pieces I already have. Click to see what I was wearinig for week 1 and week 2. Here are a few of this weeks looks.

February Style

This gap scarf is 8 years old and I have only worn it a handful of times. It is so soft and I love the colors so I’m not sure why but I pulled it out and loved this look. My dolce vita boots are still going strong and were worth the splurge.

Office Look

Apparently I should wear this combo every week as it seemed to be a fan favorite! I have had this top from Ann Taylor for years and I love it but don’t always know how too wear it. I had not planned to pair this orange sweater with it but when I did it was love at first sight!

Both this jacket and the dress are highly underutilized items in my closet. I do love this dress but worn without a belt it feels a little frumpy and once I add the belt I’m self conscious about the length. I wasn’t sure about the black tights and white booties but decided to go for it. I’ve worn these white booots more than I ever dreamed I would and here is an almost identical pair in a slighly lower heel. Overall I like the look but think it’s time too let this dress go. Maybe I can work on my bed making skills too haha.

Casual Look

Finding a gingham button down in a color that supports a sports team is one of my favorite ways to show a little team spirit. This year Dillon’s team is green and yellow so I will be wearing this one a ton.

Sunday Style

And talk about some oldies! This sweater is so happy and lightweight enough for those warmer winter days. These jeans are Treasure and Bond and have been in my closet for probably 6 years! It was time for a pedicure so, yes, I was wearing flip flops in February!

What I’m Doing this Weekend

I am actually going to spend the weekend with my mom! I’m looking forward to taking her to visit her cousin who recently moved to an assisted living facility in town.

What I’m Looking Forward to Next Month

Spring Break! I am going to soak up an excuse to do something at spring break as long as I still have one at home. We are suppose to go on a little college roadtrip but I’m behind no planning so we will see if I can pull it together!
