What We’re Eating

The air fryer has been has been around for awhile and when I saw this one on sale $40 off I decided it was time to try it. Y’all, I’m in love! I hate things being out on my counter but this applicance may just have earned a permanent home in just two days. It has been so easy to use and I can’t wait to try more! Target has lots of kitchen deals going on right now which also includes my other meal prep favorite, the instant pot. Amazon is also matching the price on the air fryer if you prefer to shop there.

Easy Air Fryer Meal #dinner
Toss chicken in avocado oil with salt, pepper and crushed garlic and cook @ 400 degrees for 20 minutes turning once. Serve over cauliflower rice or pasta with cilantro and lime

Salt & pepper chicken strips and wrap each in 1/2 a piece of bacon. Brush on your favorite hot sauce or barbque sauce and cook at 400 degrees for 20 minutes turning once.

Monday and Tuesday both involved chicken tenders in the air fryer. I used fresh, boneless, skinless chicken tenders and cooked about 10 minutes on each side at 400 degrees. One of my biggest pet peeves is pale looking chicken so I was so happy to see how this turned out in the air fryer verses baking in the oven.

What I’m Reminiscing About

I’ve been thinking alot about where we were just a year ago, so naive and unassuming that a pandemic was heading out way. Would I have been living differently had I known what was on the horizon? I’ve read through some of my instagram posts and blog posts from that time and have shaken my head at myself a few times!

What We’ve Been Up To

We kicked off January and the new year with a much needed weekend away in the hill country just the two of us! Followed that up with an unexpected but much treasured snow day which left us all feeling like kids. On the 15th we celebrated Dillon turning 19! Carly & I had a fun little day date at a new local fun spot, Instaland. And I took a little walk down memory lane with my mom with a little Texas day trip. Of course every week that starts (or ends depending on how you view your week) with Sunday supper is my favorite!

What I’m Working On

Learning more! I’ve had my head in the sand for far too long when it comes to how our government works, right vs left, and racism. I don’t want to be so ignorant anymore so I’ve been working on learning. If you don’t already follow @sharonsaysso on Instagram she is a government teacher with a wealth of knowledge on how our government works. She is even offering a government for grownups course in February!

I’ve opened my mind and my heart to explore learning more about racism in America and set my white pride aside while I do. So far I’ve learned from listening to others stories and enjoyed listening to Austin Channing Brown read her book, I’m Still Here.

Yesterday, Emily P. Freeman also shared a podcast about reflection as activism and it was a really great listen. She said “Love listens, without defensiveness, self-centering or a secret agenda.” It’s a good listen and Emily is just such a calming force.

What I’m Excited About

My big girl camera broke recently and I finally bit the bullet and a new one arrived this week! I can’t wait to play around with it. The last several years I’ve really gotten away from taking as many pictures and, while the iphone has come a long way, if you love large framed pics around your house a real camera is just better. I’m excited to get back to taking “real” pictures.

What I’m Watching/Reading

I’m almost done watching Bridgerton and have loved it! It’s a bit steamy so I’ve definitely had to watch in the late hours or when I’m home alone.

Earlier this month I shared my 2020 fave books; both audible and read and there are some good ones whether fiction or non-fiction is your jam. Currently I’m reading Within Reach and it’s an easy love story but not a huge page turner. Looking for my first great book of 2020!

What I’m Listening To

I’ve enjoyed so many podcasts recently from Jordan Lee Dooley. I loved her interview with Lysa TerKeurst on her book Forgiving What You Can’t Forget and also found lots of things to ponder listening to her interview with Rachel Cruz on financial habits and a second on diversifying your income.

What I’m Wearing

Yep, my fave fall purchase is still on major repeat! I love this sweater blazer and it has been dressed up for work and down with leggings multiple times. It now also comes in navy along with black and blush. I love how this look came together with these skinny pants from my winter stitch fix box.

January Looks #style #mystyle

Thanks to Jill at Doused in Pink I finally found a pair of joggers I’m loving! They are a lighter weight…kind of more of a wind pant material…but the first I’ve found to fit my shape. I love all the super soft joggers but they hang up on all my lady bumps in all the wrong ways. It’s only available in a small but I found my exact reversible vest on sale for $29!

I’m all heart for this sweater and am thinking I should layer over my fave plaid shirt today as we have a little cold front sliding in!

Even though we are still not staffed 100%, I’m making an effort to dress somewhat business casual. My fave dress pants come in a ton of colors and I just added in navy. I love how this look came together to create a little sunshine on a winter day! A gingham shirt is such a great layering piece and this one has been in my closet for years!

What I’m Doing this Weekend

Good question! We only have a few “free” weekends left before I life revolves around baseball and dance competitions so I’m feeling like this weekend will be a relaxed one.

What I’m Looking Forward to Next Month

Baseball season! After losing his senior baseball season we have been missing some baseball. So looking forward to (fingers crossed) watching baseball this spring.
