Another week down and we are now heading into the last week of school!!  Even though I still have to work, just knowing I don’t have to have anyone to school on time will be a nice break.  Here is a look back at our week!  

Monday was a long day!  After missing 3 days of work the previous week I knew it would be a little crazy.  This yummy bacon, avocado and tomato on Eziekiel toast was the perfect lunch.

Girls night out to celebrate a “friendiversary” had been on the calendar but I really wasn’t feeling it. I finally pulled this little outfit together and made it to dinner.  
Thank goodness I did because the girl talk and laughs were just what I needed!!  So you guys know Holly and I have been friends for about 15 years but we only met Katy and her bestie Cindy in person last May!  We have Melanie Shankle to thank for that as we finally all met at an event where she was speaking.  I had stalked Katy & Cindy for years because we use the same local photographer and they have adorable kids!

It was a busy week for 4th grade!   On Tuesday Carly had a field trip to the George Bush Library but sadly I did not get to attend so no pics.  Wednesday she portrayed Molly Goodnight in the Living Statues presentation at school.  She was most excited about the baby buffalo her Aunt Amy found that she is carrying in her basket.  What is Living Statues?  Each 4th grader represented a person from Texas history, dressed the part and had a script to memorize.  You can barely see the red button on the floor but as you walk up you press the button and the child recites the information on their person . Riley was Harry Houdini when he was in 3rd grade I think…..ahh…memories.  
One of the many reasons we love this school.  The 1st day of Kinder we were blessed with this amazing lady.  Her name is Cara Jo and immediately we knew she would become part of our family. She teaches 1st grade now but she still makes sure to keep track of the kids she taught.  She sent me this picture of her and my girl and I found a note the week of STAAR testing she had given Carly to encourage and support her that week.  Amazing!  

I cooked 3 meals this week!  So proud.  I actually have made stuffed peppers many times and often I do it differently every time.  This night I pulled out my Better Homes & Gardens cookbook that I received as a gift at my first wedding in 1992!!  Nothing but good old homecookin in that baby.

They turned out so perfect!  Enough for dinner and lunch leftovers.

I also made the simple shredded chicken tacos in the crockpot….1 can chicken broth, cup of picante and pkg of taco seasoning.  I garnished with mango salsa, shredded lettuce and red onions.  If you like onions, I love to soak red onion in lime for about 20 minutes..so yum!  
Carly Jo browsed through the Skinny Suppers cookbook and tagged all the meals she wants me to make.  I’m thinking we will try to add one new meal a week this summer and she will be in charge of picking the meal AND making the grocery list!  
Friday I shared a few Road Trip ideas as Riley and I headed off on a flight to California to pick up his truck and head back to Texas.  
Thursday night as I headed to Fort Worth, Riley let me know he was going to have to see the surgeon before first thing on Friday because his incision was “leaking” when he raised his arm.  Nasty I know..sorry for TMI.  I was really just torn between being worried about him and worrying about the fact that we might not make our flights….our non refundable flights in which I used all my credit card points on.  I just started praying for peace with this situation and for Riley’s health.  As always is the case, God surprised me with calmness and took all my worry away.  We made it to the surgeons office by 7:50 Friday morning, saw the doctor and were at the airport by 9:15!  

We made it 1400 miles together!  I love this kid and his crazy antics and sense of humor.  I will share more about our trip in another post soon I promise!

Riley dropped me at my car at DFW and I headed for the HWY to College Station to see the rest of my babies (and Dutch).  About 10 miles down the road the A/C went out in my car.  I seriously rolled my eyes and may have cursed a bit.  Y’all….I just rolled 100K miles in April and had an extended warranty up until that point!!  So frustrating.  Anyway, I stopped to grab gas and decided a cream cheese kolache was just what I needed to bring the joy back!  I made it home just in time to enjoy fried shrimp my man was cooking and kiss my littles.  

I know I shared a picture of my Mamaw last week but this week the Assisted Living home actually had the Tiger mascot and cheerleaders come take pictures with these former students.  I am cracking up over the skinny arm! She is such a mess but looking pretty good to be 89 right?!!

And while I was away Keith made sure Dillon made it to play both 7 on 7 football and baseball out of town and then took the kids fishing on Sunday afternoon.  This girl’s smile says it all!  Time with dad is such a big deal for kids.  
So I have gotten really bad at remembering to take pictures for the blog as I have instead become a little Snap Happy!  If you followed me on Snap you would know that Dutch ate the toe off my favorite studded pink flats while I was gone.  I know this is just “one more thing” but it has been really fun actually seeing some bloggers I follow share videos and being able to now have a voice with their face.  So if you have Snap….let’s be friends!  
Wishing you all a super week!  I am starting the day helping with some of the details for a workshop a committee I’m on is hosting and then on to a foodbank meeting this evening.  It will be a long day but full of opportunity I’m sure!

  1. Please post the recipe for the stuffed peppers! They look awesome! We're having chicken fahitas in the crockpot tomorrow night, but my recipe is a tad different. So glad God blessed you and Riley with safe travels this weekend! Loved seeing all your Snaps!

  2. So I just signed up for snap chat, and I don't even know how to use it, how to add people, how to make a snap, I seriously should just delete the app. Glad you had a great road trip. And ugh for the dog eating a shoe. Have a great week my friend !!!

    I LOVE the black, white and red outfit!
    I never think to make stuffed peppers but I NEED to add that to my menu this week, they look so yummy!

  7. Oh em gee I love Snap Chat! Its how I keep up with my 23 yr old! Follow me back! I don't lead a super crazy and fun life but its not half bad! kim_2u I am bored with Facebook. I gave it up for Lent and am thinking of giving it up for good. Its hard to keep up with IG, FB and SC! LOL

  9. I felt that way too Darcy but I've been surprised that it actually seems less intrusive on my time than FB or IG even. Probably just because I don't have many friends yet!! I have just loved seeing little videos and being able to hear bloggers voices.

  10. I didn't get it at all at first…..but now I'm liking it way too much. I have been so over FB for so long and rarely hop on there. I think Snap has seemed more personal and easier to manage mainly because I don't have too many friends. haha I'll be posting the peppers recipe tomorrow. 🙂

  11. Deal Sarah!! I don't mind it as long as I'm intentional about it. When things get kind of crazy and I'm going in just to grab enough to make ONE dinner several times a week I am over it. Let me know how you like the onions….it was a game changer the first time we tried them!

  12. I wish I was good at Snap Chatting. It is just one form of social media I can't get into, well that and Twitter. So glad that you made that flight. I can imagine that must have felt a bit stressful. Your food photos too. Goodness, you always make me hungry.
