On Monday I traveled to take my mom in for a procedure in Sugar Land and as you can see she was happy as a clam once it was over!  She has her follow up tomorrow and we are saying a few prayers the results are all clear.

I rushed back to help this little doll get ready for her dance pictures!  Their costumes were suppose to be blue but were mistakenly ordered in pink and Carly was not impressed but put on a smile as soon as she found her bestie.

Little bit has dance the same day so Holly was able to grab this shot of the 3 of them.  Too much cuteness!

Tuesday was more of the same for ballet class pictures.  I just can’t believe how fast these two are growing up lately.

It was also STAAR testing so Carly Jo requested a special breakfast.  I’m so happy my kids are loving this pancake/waffle mix as it starts there day with so much more protein than ordinary waffles.

Thursday we were back at the field for high school baseball.  I really thought Dillon was done growing but, y’all, he drank a gallon of whole milk between Wednesday and Friday this week!!

Dillon was working on a project for his World Geography class so we took the opportunity to try a Turkish restaurant in town.  My family was not impressed and pretty much just ate the bread!  I thought it was delicious but of course there isn’t too much I won’t eat.

I made it to work out Friday night and again Saturday morning so afterwards Carly and I headed to Torchy’s Tacos for some grub. Sure, I love tortillas as much as anyone but to cut the carbs I ask for mine in a bowl.  So good!

We even took Dutch along with us and he was such a good boy!

Carly and I spent the remainder of the day on the garage.  Now, I know this may not look that great but let me tell you, the entire area you can see open was full of crap!  I can now park my car in the garage AND I have listed all the stuff piled up to sell on an online site.  Feels so dang good to walk out the door and not have to make a path to see the light of day!

We were set to have the worst weather since 2008 in our area on Saturday.  It thundered a few times and we had a brief rain but thankfully nothing else.  Instead we headed to the grocery store!  This is one of my favorite things to make that is so light and super easy.  I add a bit of EVOO or Ghee to the pan, sautee onions and then add the shrimp cooking until done.  I sprinkle a little cilantro on top and let it wilt a bit and then squeeze in some lime.  They work great on a salad, wrapped in a tortilla or even over pasta.

I chose to have a taco made with the little bib lettuce leaves.  This has been my new favorite thing to eat lately.  I topped them with a tiny bit of Tessemae’s creamy ranch and this made such a great lunch.

Literally, I spent the rest of the day prepping my food for the week.  It really was not how I planned to spend my afternoon but I know I will be so happy I did when I’m not rushing to pull together my breakfast and lunch each day.  Hopefully if I can keep this ups my shorts will fit again soon!!

There was a time these two were quite the handful and having play dates was a lot of work!  Now they are just so much fun.  I found them with a plasma car tied behind a bike rolling down the street today just laughing away.

Then they talked me into letting them make cupcakes BY THEMSELVES and since my kitchen was already a mess it seemed like a win.

After a little compromising, they added food coloring to the batter with the end result being rainbow cupcakes.  I’d show you the after icing picture but let’s just say these ended up being the ugliest cupcakes ever!  Ha!  So ugly Carly sent as many as she could home with Holden and she tossed the rest.

  2. I like that pancake mix too- I use almond milk with it. My kids don’t love it so much, but sometimes it makes for a nice breakfast for dinner for mom and dad. We’re getting a Torchy’s down the street from us, and we’re so pumped! I’m making a copycat of their queso for an appetizer this weekend! Have a great week ahead!

  3. Those kodiak cakes are so yummy. My kiddos love the mix too. And a teenage boy and food is no joke! I am already having a crazy time wrapping my mind around what I am in for as my son gets older. One of my friends has two teenage boys and the amount of food they go through in a week is insane. What a great week you all had! Happy Monday Shelly!

  5. I’ve never had Turkish food but it looks delicious. All the food you ate looks delicious! What type of project did your son have to do for geography? Have a great week!

    1. They have been studying 3 countries at a time and each project they have had a list to choose from as to what they could report on such as make an authentic dish, watch a sporting event, interview someone, dine at a restaurant. It’s been fun and a way for the rest of us to learn something too!

  6. I think you’ll agree with me that EVERY weekend needs to be 3 days! I swear I spend one day just getting my meals prepped for the week. Love the idea of tacos with bibb lettuce, I’m all about cutting the carbs wherever I can. The garage looks good too – such a nice feeling, right? Have a super week!

  7. I loved getting a glimpse at your week! I will say a prayer for your mom that the results are good. XOXO I think the dance costumes are really cute! My daughters have theirs next week. My 10 year old is bummed that she will have a cast for them, but at least it matches her costume!

  8. You are a good mama, mama! That darn STAAR testing. Glad you fixed a hearty breakfast for your test-takers. Back i the days of TAKS and TAAS, I used to have snacks for the babies I was testing. But that seems to be a no-no now days. Great job on the garage clean up. I just sold my first item on our neighborhood’s FB page. Thinking that might be the way to go over yard sales. Love the ballerinas in their costumes. Hoping my granddaughter returns to ballet next fall. How did your mama’s test turn out?
