Pesto Shrimp & Pasta
I also happened to have linguine for another recipe I had never gotten around to preparing. I’m sure any noodles and pesto would work but I love the Buitoni brand.
This really could not be easier! Use half the pesto to cover the bottom of the pan before layering the peeled, deveined shrimp on top. Then top the shrimp with the other half of the pesto.
Pop it in the oven and bake at 350 degrees for 30 minutes while you boil the linguini.
Top with some grated parmesan cheese and tada, you have dinner! I promise there will be no shrimp left behind. Even if you are skipping noodles, these shrimp are great over a bed of spinach.

I can't do shrimp. It's too soft. The idea just makes me gag. BUT you had me at noodles. So I'll just have a bowl of those when I'm over for dinner, mmkay?

Yum, I haven't had pesto in probably 10 years? Why has it been so long? hmmm..I must change that soon! Shrimp is so good too, yum!
haha! Maybe you need to cook it more? I have issues if the shrimp is too big, if I can't eat it in one bite then I start to think of them swimming around in the ocean all happy and then I get grossed out and can't eat any more…hehe.

Pesto is soooo good! One of my favorites is Mix and Match Mamas Baked Chicken Pesto tacos….soooo good!
GIRL!! We keep pesto on hand all the time! It can really even make something as simple as spaghetti sauce so much more decadent!

It's so weird how we all have our thing right? I love shrimp fried the best but I can eat them this way as long as I've cooked them well. I'm weird about chicken…I can't handle it if it's too pale. haha
