No Fail Easy Lasagna

When I was first married and crazy out of my mind at 22, I tried to make homemade lasagna and boiling noodles was a disaster!  I could not remove one from the pot without tearing it in half.  I tried making frozen lasagna and that just wasn’t working for me either.  By chance one day I happened to notice right there on the Skinner’s lasagna box, a recipe for Virginia’s Easy Lasagna and it has been a family favorite for 20+ years.

Over the years I have tweaked the recipe a bit and have found we like it best with a 1/2 and 1/2 combo of lean ground beef and Italian sausage.  I have also made with cheap spaghetti sauce when we were on a budget but have graduated to a much healthier and heartier sauce.  My fave is Monte Bene tomato basil.

I almost always double this recipe and prepare two pans at once whether I’m freezing for our family to pull out for a future event or gifting a dinner to a friend.  It is just so easy and quick it’s hard not to!  A note on freezing, always wrap in foil and be sure to thaw before continuing with the cooking directions.

We typically serve garlic toast and a fresh ceasar salad with our pan of lasagna.  One pan easily feeds our family of 6 and no one leaves hungry!  It is definitely the most requested meal for family gatherings.
 
 
 

 

While Skinners does make Oven Ready lasagna noodles and there is a recipe on the back of the box,  I have tried it also and really think this one is tastier using the regular noodles.

So easy, so delicious!
