Friday Favorites – Souper Faves
We have been watching the forecast with wide eyes because our Texas blood doesn’t even know what to think about winter storm Shirley heading out way! As I was looking at the forecast this morning, we are projected to have a low of 7 degrees on Monday night and the last recorded single digit temperature was in 1989! The last time we recorded consecutive days below freezing was in 1983 so we are definitely out of practice.
So while it’s super cold outside, I will definitely be celebrating with some souper faves to warm us up inside! I thought I’d share my fave soups today in case you are looking for a yummy escape from the cold.
I love a good tomato soup especially if I have a grilled cheese to dip into it! My family isn’t quite the fan, however, so wheen I make tomato soup I tend to make it a little more for me with this whole 30 option that cooks up perfectly in the instant pot. I haven’t made this in awhile and seeing this picture makes me think it will definitely be on the menu this weekend! I’m more than positive that I licked the bowl with this soup.
Homemade chili is a year round favorite for us but especially when it’s so cold out. I typically just google a chili seasoning recipe like this one, add an 8oz can of tomato sauce, 2 cups of low sodium beef broth and a can of rotel tomatoes. My family doesn’t like chunky tomatoes in their soup so I always use my mini food processor to puree the can of tomatoes first. I brown the meat with an onion in the intant pot and then add the rest of the ingredients, give it a stir and set the instant pot for about 20 minutes. While this could all be cooked directly on the stove as well, I feel like the flavor is a little more robust when I use the instant pot!
We love to top our chili with avocado, cilantro and cheese but chili is so versatile. Sometimes we eat over rice or cauliflower rice for a low carb option but let’s be honest, fritoes are always a win too! My family is not a huge fan of beans but adding a can of kidney or pinto beans or, my personal fave, hominy is also a yummy win in my book.
One of my all time favorite soups to make is this Sausage Tortellini Soup originally found from Shay at Mix and Match Mama. This one is so easy to make I think anyone could do it. I made it last night but forgot that I typically subbed rotel tomatoes for the regular diced so it wasn’t as spicy as I normally like it but still delicious. This is one of those soup that is even better on day two after it’s had time to soak up all the flavors!
Potato soup is definitely one that will warm you up from the inside out and it’s just complete comfort food. I love using this easy recipe with hashbrown potatoes but I prefer the shredded potatoes instead of the cubes and I definitely prefer to cook up some bacon fresh instead of using bacon bits. Since Keith’s heart attack we have really tried to watch the sodium intake which means trying to find alterenatives to canned soup. I found this recipe for cream of chicken soup and made it to use instead of the canned and I honestly think it made this even creamier.

Chicken Noodle Soup is always good for the soul right? I love to make a big pot using a rotisserie chicken. When I found this chicken zoodle soup recipe, I started making a big pot and then splitting in half before adding no yolk egg noodles to one and zuchini noodles to the other. It’s an easy way to please the family but also have a low carb dinner for me that is so filling and full of veggies.
