Five on (GOOD) Friday
Happy Good Friday friends. I hope most if not all of you have this sweet day off to spend with your family. I will be working but only half the day. Then it will be time to work on getting my house in order to host Easter lunch on Sunday. Here is a look at my Five on Friday!
It seems appropriate to start with the one on most our minds this weekend. I shared a bit about my journey to Jesus last year but my journey is still ongoing and every year I feel a little closer and a little more at peace. I can only believe that is partially to do with my acceptance of what his death means for me.
If you haven’t already seen this good read floating around Facebook, I suggest you head on over. The Day God Gave Me More Than I Could Handle really spoke to me and I know for sure I’m guilty of using this phrase in the past. The older we become the more wise we hopefully become. Sometimes that is because the older we become the more we have friends and family members struggling with unimaginable pain. Maybe you yourself are struggling with unimaginable pain. Having more awareness for responding when others are struggling is big on my list and this article was a great read.
The only reason I’m not a food blogger is because I am never home when there is good lighting and I have black counter tops! Ha! For real though, I love food. Like seriously love food. I don’t mind eating healthy but I have to keep things interesting and delicious. I ran across this recipe for zucchini pasta and sundried tomato cream & chicken and y’all, I’m seriously amazed at how amazing it was! The sundried tomatoes weren’t around and Keith doesn’t like them so I skipped them and it was still delicious! Carly Jo even put the sauce over real noodles and loved it. Big tip if you ever decide to use coconut milk to cook with, make sure you are buying the unsweetened whole fat kind. I once bought the sweetened kind and ugh..nasty.
Since I’m hosting Easter lunch, I’m looking for a few side dishes. I ran across these amazing scalloped potatoes from Lexi’s Clean Kitchen and I’m thinking I need to try them. I’m pretty positive getting them just the right amount of burned on top is the real key to these being absolutely amazing.
We will definitely have egg dying on our list this weekend and when I saw these on Instagram I could not help but think these would be right up my kids alley. I’ll let you know if I can pull this off or if the PAAS kit wins again. I shared a few more cute ideas on The Blended Blog today for Friday Loves!
