Five on Friday – Pin Worthy Recipes
Happy, umm, Friday? Anyone else feeling confused about what day of the week it is after having a midweek break? We were blessed to receive an unexpected 1/2 day off on Tuesday which was so nice and we had a super laid back 4th. I’m wrapping up the week with a little more time at the office before I head out to my hometown to pick up my girl! Carly Jo has been visiting my mom since last Saturday which makes it really quiet around here!
Today I thought I’d share with you a few new recipes I’ve had success with plus one new one I’ve added to my list to try. Sometimes I just need some new inspiration in the kitchen and these were definitely winners.
Keith and Carly Jo shelled a load of peas from Paw last week and they sat in the fridge for a few days before we had a chance to cook. In the past I would have cooked all day in the slow cooker but decided to give the Instant Pot a try! In the pot they went and I added 2 cups of chicken broth and a little salt and pepper, set the pot to manual for 30 minutes and went about my day while Keith fired up the grill for pork chops and corn. I let the Instant Pot release naturally and when they were down I could not stop looking at how pretty they turned out! Wish I could say the same for the cornbread…note to self…if cornbread mix is expired it doesn’t rise and ends up all gummy.
This month I received 3 packages of party wings in my Butcher Box. Y’all, if you saw my insta-story you know I don’t do chicken with bones or skin on. I barely can handle chicken as it is but if I’m going to cook it typically is a boneless, skinless breast. Dillon loves wings so I decided I would give these a try. I followed Good Dinner Mom’s instant pot easy chicken wings almost exactly and let’s just say not a wing was wasted. I used Tony’s seasoning and gave them a good dusting before cooking for 5 minutes (yes, just 5!) in the Instant Pot. Once cooked I tossed half in Frank’s hot sauce and the other half in Sweet Baby Ray’s bbq sauce. After crisping a little in the broiler you then toss in sauce again. We decided our favorites were the BBQ that we then tossed in the Franks after broiling! It was the perfect combo of sweet and spicy.
We really are enjoying our monthly delivery from Butcher Box and have received such a variety of items; many of which I had never tried using before. Right now if you sign up you can get bacon for life! Momma loves some bacon!
We were heading to a barbeque for July 4th and I wanted to make something other than my perfect pasta salad for a change. My mom made a killer homemade mac & cheese when I was growing up but I had never tried to make it myself. Enter this recipe from The Salty Marshmallow using the Instant Pot and wowza there was not a single shell remaining at the end of the evening. While I did modify and use shells instead of elbow macaroni, I followed her instructions for the rest exactly. I really do think the 3 types of cheese was the difference maker.
Every now and again I get in the mood to join all the peeps I see making homemade pizza and I’ll pick up a crust from the store. A flatbread crust from pillsbury caught my eye this week so I picked it up knowing I would be cooking for myself Thursday night. In the past I’ve always been sorely disappointed in how the crust turns out as it typically is crisp around the edges but still soggy in the middle. So I googled “homemade margarita pizza” and once again the internet changed my life! Maybe I’m exaggerating a tad, but seriously, the information Laura shares as part of her Homemade Margarita Pizza recipe made all the difference for me. Not only did heating the stone at the highest oven heat result int he best crust all the way to the center, but her super easy pizza sauce took me all of maybe 5 minutes! Seriously so darn good! The only bad thing about cooking an entire pizza when you are home alone is not having any one to share with. Oops.
Since I now how fresh basil on hand leftover from the pizza, I’m hoping to make this lovely dinner. I love a good meatloaf but sometimes changing it up just a tad is a nice change. We aren’t big turkey fans around here so more than likely I’ll be making with beef. I’ll share the final verdict on my insta-stories when it makes it to our table.
